Where It All Began

Back in Adelaide’s medieval scene, we were on the hunt for one simple thing – a good mead. Not overly sweet, not watered down. Just real flavour, made with care.

When we couldn’t find it, we started brewing it ourselves.

What followed was years of testing, tweaking, and tasting our way to something better.

Thistle Meadery isn’t the result of a trend – it’s the product of patience. We’ve spent over a decade working with honey profiles, fermentation techniques, and flavour pairings to build a range that’s bold, balanced, and worthy of the pour.

We don’t cut corners. We don’t do shortcuts.
We craft in small batches, and we get it right.

Thistle by name, thistle by nature. There’s beauty here, but it’s not without edge. Our mead is refined, sure – but it has grit, flavour, and presence.
